  • In a medium pot, add celery root, 3/4 cup water, and the salt. Simmer, covered, over medium-high heat until celery root is soft, about 15 minutes.

  • Over low heat, add EVOO, sage, garlic, and fennel seeds to a small saucepan; heat until just warmed, about 3 minutes.

  • Remove from heat. In a blender or food processor, add beans, celery root, and aromatic oil. Blend until smooth. Season with salt and pepper. Garnish with additional oil, sage, and fennel seeds. Serve with seasonal veggies.
